2 cups of brown rice, cooled, mixed with 1/3 cup olive oil, 1/2 cup fresh squeezed lemon juice, fresh diced mint (about a tsp) minced garlic (tsp+), salt & fresh ground black pepper.
Cover it and let it sit in the fridge for a couple hours, then add diced tomatoes, cucmbers, black olives and about a cup of fresh diced parsley.
It's pretty amazing!
