I'm a fan of escargot, but this dish does not incorporate garlic, salt and butter like traditional escargot. Therefore, more of the flavor of the escargot comes through. This is ok, but can take you but surprise if you have never tasted them without butter and garlic.
The soup base
without the addition of escargot is heavenly on its own! I can see modifying this to add other veggies like Leeks, or other mollusks like oysters or scallops.
OMG yes, scallops...
