Poached Pear Wine Vinaigrette:
1 cup of leftover wine sauce from the Poached Pears recipe in
A Feast of Ice and Fire
1 cup rice wine vinegar
2 tbsp red wine vinegar
2 tsp soy sauce
1 tsp minced ginger
Mix all ingredients thoroughly. Store in an airtight glass container in the fridge. Serve over salad.
This has a rich full flavor, but it is a little watery. You may wish to add oil.
